This snack is delicious to be enjoyed with coffee and tea. In Tuscany, these cookies usually are eaten with a glass of Tuscan dessert wine or vin santo. We will need 250 grams of all-purpose flour and it is sifted. Then, we could use 165 grams of granulated sugar. We also need one tablespoon honey, one teaspoon baking powder. For the flavors, we could use one teaspoon grated orange zest or lemon zest and one teaspoon amaretto or ½ teaspoon almond extract. Then, we need 2 eggs and 125 grams raw unpeeled almonds.
We will need to preheat the oven to 180 degrees Celsius. Then, we prepare a large bowl. On that bowl, we combine the dry ingredients; flour, baking powder, and sugar. After all the dry ingredients are a mixture, we add eggs, honey, orange zest, amaretto and the rest of the ingredients, except almonds. We mix all the ingredients until the dough crumbly and soft mixture. We add the almonds after that. Then, we transfer the dough on lightly floured surface. Then, we roll the dough into logs which are about 20 cm long 5 cm wide. After that, we put the logs on the baking sheet lined with parchment paper. Otherwise, we use a silicone mat. Then, we bake the rolls of dough for 30 minutes until turn golden brown. After taking from the oven, we remove the logs and cool them for 10 minutes before slicing. Then, we cut the long with a sharp and serrated knife into 1.5 cm slices. After finishing the slicing, we put them back on the baking sheet and bake them for 10-15 minutes and we do not forget to turn over.
